Who else grew up loving Hot Pockets? I did, I did!! Well, I have a treat for you today!
I have a new, ketofied version of Hot Pockets, using fathead dough, that brings keto comfort food and nostalgia to a whole new level!
I discovered fat head dough early on when my family started our keto journey, but only used it for pizza crust. Little did I know, at the time, how versatile this amazing dough could be!
Used in sweet and savory dishes alike, the possibilities are truly endless!

Today, I’m bringing you another savory fat head dough recipe. I wish I had recorded my family’s faces when they took their first bites of this keto hot pockets recipe because it was complete amazement followed by pure bliss.
In fact, my husband and teenage son were fighting over the last pocket! Oh yeah, this was an instant winner in my household, and I will be making them again very soon!

The keto hot pocket dough uses your basic fat head dough ingredients: Mozzarella Cheese, Almond Flour, Eggs, and salt.
I used Ham, Cheddar Cheese, and Dijon mustard for the filling, but you can stuff these pockets with anything your heart desires.
First, mix the almond flour, mozzarella cheese, and cream cheese in a microwave-safe bowl.
Next, alternate between microwaving for 30 seconds and stirring the dough until you have a homogenous mixture.
Then, mix in 1 egg and your salt. This is where you’ll have to get your hands dirty because the best way to get everything mixed together well is by kneading and squishing the dough between your fingers.
Divide the dough into four pieces. Roll out each piece of dough into a rectangular shape. Add your fillings, fold the dough over, into a pocket and pinch the ends to seal it off.
Brush the tops with an egg wash and bake at 350 degrees F for 20-25 minutes, until the hot pockets are a golden brown.

Ingredients
For the dough:
- 7 oz Pre-Shredded, Low-Moisture Mozzarella Cheese
- 3/4 cup Almond Flour
- 1 oz Cream Cheese
- 1 Large Egg
- 1/4 tsp Salt
- 1 Large Egg, beated for the egg wash

- 1 cup turkey or ham, chopped
- 1 cup cheddar cheese, shredded
- Dijon Mustard, to taste
Instructions

I am going to try an Italian version. Italian hot sausage, ricotta, and maybe pepperoni. My mom used to make this with regular old fashioned flour dough. My family said yes ! to that idea.
