From Skillet to Grill to Stuffed Peppers—This One Does It All

This recipe is one of my favorite flavor bases. It reheats well, can be stretched for multiple meals, and works whether you’re feeding just yourself or a whole crew.

When I’m making it for the family, I’ll serve it cheesesteak-style in hoagie rolls, or turn it into stuffed peppers with melted cheese on top. For me? I keep it dairy-free and serve it as-is or with a side salad.


📋 Ingredients:

  • 12 oz beef sausage (pre-cooked or raw), sliced into 1-inch rounds
  • 1 bell pepper, sliced into strips
  • 1/2 onion, sliced
  • 1 tbsp olive oil
  • 1/2 tbsp minced garlic
  • Sea salt and black pepper, to taste

🔥 Instructions:

Skillet Method:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and sear until the edges start to crisp, about 4–5 minutes.
  3. Add peppers, onions, garlic, salt, and pepper to the skillet.
  4. Sauté everything together until the vegetables are tender and slightly caramelized.
  5. Serve hot—or cool and store for later!

Grill Method:

  1. Grill whole sausages and veggie skewers, or wrap sliced sausage and veggies in foil.
  2. Cook over medium heat for 15–20 minutes, turning occasionally.
  3. Optional: Transfer to a skillet for a final crisp-up or slice grilled sausages before serving.

💡 How I Use It:

  • Cheesesteak-style for the fam: Serve on hoagie rolls with cheese for a comfort food twist.
  • Stuffed pepper remix: Spoon into bell pepper halves, top with dairy-free cheese (or regular for the fam), and bake.
  • Leftovers FTW: Use cold leftovers in wraps, salads, or scrambled into eggs the next morning.
