For years, my go-to birthday dessert was a mug cake.

Then I found these chocolate chip cookies.

And honestly? They changed everything.

These cookies have become one of my most requested recipes. I make them for birthday celebrations, family gatherings, holiday cookie boxes, and random weeknight cravings. I’ve served them to friends, family members, and even some of the pickiest eaters I know.

The reaction is always the same:

“Waitโ€ฆ these are healthy?”

Every single time.

The Secret Isn’t What You Think

When people hear words like low-carb, keto-friendly, dairy-free, or healthier dessert, they often assume they’re about to bite into something dry, crumbly, or flavorless.

These cookies are none of those things.

They’re soft in the center, slightly crisp around the edges, packed with chocolate chips, and taste remarkably close to a traditional homemade chocolate chip cookie.

In fact, most people have absolutely no idea they’re eating a healthier version unless I tell them.

That’s one of my favorite things about bringing them to parties. Watching people go back for a second cookie before learning they’re made with healthier ingredients never gets old.

The Two Swaps That Work Perfectly

The original recipe is fantastic, but over time I’ve made two simple substitutions that work beautifully for my family’s needs.

Swap #1: Unsweetened Applesauce Instead of Egg

Instead of using an egg, I use one unsweetened applesauce squeeze packet.

This helps keep the cookies soft while making the recipe a little more allergy-friendly and convenient. As a busy mom, I almost always have applesauce pouches in the pantry, so it’s an easy swap that requires zero extra effort.

Swap #2: Earth Balance Instead of Traditional Butter

To make the cookies dairy-free, I substitute Earth Balance dairy-free butter for regular butter.

I’ve found that it delivers the same rich flavor and texture while allowing friends and family who avoid dairy to enjoy them as well.

These two simple changes have become my standard version of the recipe, and honestly, I don’t miss the original ingredients at all.

Why I Love These for Gatherings

Healthy eating can sometimes feel isolating.

You bring your own food.
You skip dessert.
You explain your dietary choices for the hundredth time.

These cookies eliminate all of that.

When I bring a batch to a gathering, everyone eats the same dessert. Nobody feels like they’re getting a “special diet” version. Nobody knows they’re eating something lower in sugar and carbs.

They’re simply enjoying a really good cookie.

Every year I put together holiday cookie boxes for friends and family.

There are usually several different treats included, but these cookies consistently disappear first.

These cookies.

People ask for the recipe. They ask if I can make more. They ask if there are extras they can take home.

That’s probably the highest compliment I can give them.

When it’s my birthday and I get to choose exactly what I want, these cookies are the answer.

This one has earned a permanent spot in my kitchen.

How I Store These Cookies

One of the things I love most about these cookies is that they store beautifully.

For everyday snacking, I keep them in an airtight container on the counter for up to a week. They stay soft and chewy and make the perfect afternoon treat with a cup of coffee.

If I’m making them ahead of time for a party, holiday gathering, or cookie box, I’ll often bake them a day or two before I need them. In fact, I think they’re even better the next day once the flavors have had time to settle.

For longer storage, these cookies freeze exceptionally well. Simply place them in a freezer-safe container or zip-top bag and freeze for up to three months. When you’re ready to enjoy them, let them thaw on the counter for about 20-30 minutes.

Pro Tip: I almost always make a double batch because they disappear much faster than I expect!


Recipe Card: My Favorite Healthier Chocolate Chip Cookies

Ingredients

  • 1/2 cup Earth Balance dairy-free butter, softened
  • 1/4 cup coconut oil, melted
  • 1/3 cup monk fruit sweetener
  • 1/4 cup brown monk fruit sweetener
  • 1 unsweetened applesauce squeeze packet (in place of the egg)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon pink Himalayan sea salt
  • 3/4 to 1 cup Hu’s dark chocolate chips

Directions

  1. Preheat your oven to 350ยฐF. Prepare a cookie sheet if needed.
  2. In a medium mixing bowl, combine the softened Earth Balance butter and melted coconut oil. Beat until smooth and creamy.
  3. Add the monk fruit sweetener, brown monk fruit sweetener, applesauce pouch, vanilla extract, and almond extract. Mix until fully combined.
  4. In a separate bowl, whisk together the almond flour, baking soda, and sea salt.
  5. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  6. Fold in the chocolate chips.
  7. Roll the dough into small balls and place them evenly spaced on the cookie sheet.
  8. Bake for 9-11 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for several minutes before transferring to a cooling rack.

Notes

  • I prefer using Hu’s dark chocolate chips because they keep the sugar content low while still delivering great chocolate flavor and are top 14 allergen free!
  • These cookies are always the first thing to disappear from my holiday cookie boxes.
  • Even people who don’t eat low-carb or dairy-free desserts absolutely love them.
