These almonds are super easy to make, require no bakings, only 3 ingredients, and they are totally family and kid-friendly!

With just 3 ingredients you can have the best homemade chocolate-covered almonds!

Almonds: 1 cup of whole almonds. I used roasted unsalted almonds.

Coconut Oil: ½ tablespoon of refined coconut oil.

Chocolate Chips: 4 ounces of Lily’s dark chocolate baking chips

How to Make Keto Chocolate Covered Almonds

Melt Chocolate. Melt Lily’s chocolate chips and coconut oil in a microwave-safe bowl in 30-second increments until fully melted. Be careful not to overheat which can seize up your chocolate.

Pour. Put the almonds in a mixing bowl and pour the melted chocolate over the almonds.

Stir. Stir until the almonds are fully coated, then transfer to a parchment-lined baking sheet and spread evenly, separating the almonds as much as possible so it breaks up easier.

Chill. Place in the refrigerator for 30 minutes to set up, then break apart the almonds.

Store. Store in an air-tight container in the refrigerator for up to 3 weeks.

How do you Loosen Up Siezed Chocolate?

If your chocolate seizes up, don’t worry!

Seized-up chocolate gets gritty and rough; typically, it is caused by water. However, don’t stress, adding water can actually fix it.

Add 1 teaspoon of boiling water at a time and stir like crazy until the chocolate is smooth.

Don’t want to wait for the water to boil? You can use 1 tablespoon of coconut oil at a time, melt it, and stir like crazy.

How to Store Keto Chocolate Covered Almonds

If you are like me and make chocolate covered almonds in bulk to keep on hand, you will definitely need a plan for storing leftovers!

When you are done making your chocolate almonds, you can leave them on the counter in a bowl if your house is cool enough ie around 70 degrees or cooler. Needless to say, I don’t recommend leaving them on the counter in the Summer months.

The best way to always ensure your keto chocolate covered almonds stay perfect is to store them in an air-tight container in the fridge and pull them out as needed.

Yes! Both almonds and specific types of dark chocolate that are sweetened with low-carb sweeteners are keto-friendly!
