Super Yummy Keto Chocolate Peanut Butter Fudge

You don’t have to decide between chocolate or peanut butter fudge, because we are making both! I combined the best of both worlds in this super yummy keto chocolate peanut butter fudge recipe.

Every year, I go back and forth on which kind of fudge I make. Chocolate…then peanut butter…then chocolate…then peanut butter. I LOVE BOTH!

This year, I did not want to make a choice, so I combined the chocolate fudge and peanut butter fudge into a 2-layer fudge. Why didn’t I think of this sooner??

Fudge is a dreamy, creamy dessert that always delights, and it’s a favorite of mine that I’ve ketofied in recent years.

And the best part, none of my non-keto friends can tell it’s sugar-free and keto-friendly! It really does taste like a regular, sugar-filled fudge!

So of course, this keto chocolate peanut butter fudge recipe had to be included on my holiday food challenge!

How to Make Super Yummy Keto Chocolate Peanut Butter Fudge

If you’ve ever made homemade fudge, you already know it’s a pretty easy dessert to whip up. And this ketofied version is no different.

The only thing that needs to be swapped out is heavy cream for milk and a natural low-carb sweetener for sugar.

It doesn’t matter which layer is on top or bottom, but for this recipe, I started with the peanut butter fudge.

In a medium saucepan, melt together the creamy peanut butter and butter over medium-low heat. I recommend using homemade peanut butter, which you can easily make in your food processor.

Keto Chocolate Peanut Butter Fudge Ingredients

Once the peanut butter and butter are melted, stir in the vanilla extract and vanilla creme stevia.

Then, slowly whisk in the Powdered Swerve about 2 tbsps. at a time, and continue stirring until all the powdered swerve is dissolved and the fudge mixture is smooth.

Pour the peanut butter fudge layer into a parchment-lined 8×8 dish, and chill in the refrigerator while you prepare the chocolate layer.

In another medium saucepan, melt together the chopped baking chocolate and butter over medium-low heat.

If you are unsure of the best method for chopping a block of baking chocolate, I’m personally a fan of putting it into a Ziplock baggie and whacking it with a rolling pin. It’s effective and therapeutic!

Once the butter and chocolate are melted, reduce heat to low, and stir in the heavy cream, Powdered Swerve, vanilla extract, and chocolate stevia.

Continue stirring until all the powdered swerve is dissolved and the fudge mixture is smooth.

Be careful not to get the chocolate fudge mixture too hot or the chocolate will seize-up on you.

I have seized up my fair share of chocolate. If this happens, quickly remove the saucepan from the heat and whisk in 1 tsp of hot water at a time until the chocolate smooths out.

Seized chocolate will not ruin the flavor of a dish, but when it’s chilled, it won’t be very pretty.

Keto Chocolate Peanut Butter Fudge Melting

Pour the chocolate fudge mixture over the peanut butter fudge layer and put it back into the fridge until the fudge is completely set.

  1. I’m trying to figure out what I did wrong. My peanut butter mixture got lumpy and not smooth at all. Also alot of oil? started forming
