  • Baking powder – if you are out of baking powder, you can use baking soda
  • Salt 
  • Butter, softened to room temperature

  • Low Carb Brown Sugar – I have fallen in love with the So Nourished brand of low carb sweeteners!

How to Make Almond Flour Peanut Butter Cookies

Before you begin mixing the cookie dough, preheat the oven to 350F, and line a large baking sheet with parchment paper, which you will set to the side for now.

In a medium mixing bowl, whisk together the almond flour, baking powder, and salt, then set it to the side.

Next, in a large mixing bowl, beat together the softened butter, peanut butter, brown sweetener, and vanilla extract, until smooth.

Then, add in the dry ingredients and beat until well combined.

Finally, use a spoon or spatula to stir in the chocolate chips.

Using a 1-inch cookie scoop, drop peanut butter cookie dough balls onto the lined baking sheet, and gently press down each cookie.

Bake the cookies for 12-15 minutes, or until the edges just begin to brown and the center is just barely set. If you overbake the cookies, they may turn out very dry. 

Remove the gluten-free peanut butter cookies from the oven and let them cool on the baking sheet for 10 minutes before transferring them to a cooling rack so they can cool completely.
