Keto No Bake Cookies Recipe

A distant friend of mine has recently been on a weight-loss kick. I knew because I heard about it/saw it on social media. However, I ran into her in passing at the store; she was down about 30 pounds!

Weightloss around the holidays?! … Heck Yeah!

Naturally, I had to ask what she was doing. Her response was, “eating cookies of course!” I was so excited to hear she made the change and jumped into living a ketogenic lifestyle.

She really didn’t want to give up cookies, and honestly, can you blame her?! … absolutely not! I got to thinking … and if you are familiar with me, you know I love my cookies … I needed a no bake keto friendly cookie recipe on the blog!

These cookies are made with only a handful of pantry staple keto ingredients and are only lightly sweetened. What to turn up the sweetness? You can add more low-carb sweetener to the batter if you want.

BONUS: Because these are no-bake, you can taste/sample the batter along the way!

Ingredients needed to Make Keto No Bake Cookies

  • 1/2 cup unsweetened  shredded coconut
  • ½ cup slivered almonds
  • 2 tablespoons real butter
  • 2 tablespoons Lakanto sweetener
  • 3/4 cup peanut butter 
  • 1 squirt chocolate stevia drops
  • 1 tablespoon cocoa powder

The cocoa powder is optional, these can be made simply as peanut butter no bake cookies.

How to Make Keto No Bake Cookies

Process. Lightly pulse the shredded coconut and slivered almonds in a food processor to break up and combine. It will look similar to oatmeal. Set aside

Melt. In a microwave safe bowl, melt together the butter, low carb sweetener, and peanut butter.

Stir until combined. Stir in the stevia drops and cocoa powder until well combined.

Fold. With a spatula, fold in the coconut-almond mixture until well combined.

Shape cookies and freeze. Drop spoonfuls of the mixture onto a parchment lined baking sheet and put them into the freezer for 15 minutes to set up, then transfer to an airtight container to store in the refrigerator.

Kitchen Supplies Used

Sometimes it’s the kitchen tools that make all the difference. Below are some of my favorite kitchen tools that make preparing no bake cookies even easier!

Food Processor: I use a Hamilton Beach brand food processor. It is a lifesaver in the kitchen. If you don’t have one, but enjoy cooking and baking, I recommend taking the plunge and buying one.

Spatula: There is nothing worse than not having a good spatula handy. These spatulas have been with me through thick and thin batter; highly recommend investing in a good set that doesn’t fall apart.

Baking Sheets: You can’t bake without baking sheets. Check out this set from Amazon. They also make for a great bridal shower, wedding, and housewarming gifts.

Storage Containers: I find storage to sometimes be the most stressful part of working in the kitchen. Tops and bottoms are always missing and it makes working in the kitchen stressful. These however are my favorite containers. They are glass, so no worries about BPAs 😉

How to Store your No Bake Keto Cookies

This might sound odd, however, I recommend storing your keto no bake cookies in the freezer! Why? Because your no bake cookies can start to “melt” when left at room temperature and the last thing you want is a sad, overly soft cookie that is falling apart.

When you are done making your cookies, grab your favorite airtight container or large freezer bag and pop them in the freezer. Pull them out when you are ready to enjoy them or serve them!

I love keeping a hidden batch in the back of the freezer so I can also grab one when the cookie cravings strike!
