  • 1โ€“2 low carb tortillas
  • Shredded cheese (dairy-free or regular)
  • Avocado oil (for crisping)
  • Carne asada seasoning
    (I used a blend from Costco, but you can use any fajita or taco seasoning. If you’re DIY-ing it, garlic salt, onion powder, and paprika make a great base.)

How to Make Al Pastor Quesadillas

  1. Prep the meat:
    Toss your unseasoned al pastor meat (or carne asada) with your preferred spice blend.
  2. Cook in the air fryer:
    • Air fry at 400ยฐF for 7 minutes, shake or flip the meat, then cook another 7 minutes.
    • Note: Adjust cook time based on your air fryer and meat thickness.
  3. Prep the tortillas (if using my 2-ingredient version):
    • Heat a pan with a touch of avocado oil.
    • Preheat each tortilla for 1 minute per side until warm and pliable.
  4. Assemble the quesadilla:
    • On one half of the tortilla, layer your cooked al pastor and shredded cheese.
    • Fold in half and press lightly.
  5. Cook the quesadilla:
    • In the same pan, cook each side for about 2 minutes over medium-high heat until golden and crispy, and the cheese is melted.
  6. Serve hot with your favorite toppings or slice into triangles for easy dipping!
