I’ve figured out the fix though and am gonna show you how to manage that craving without breaking the bank on calories with these super easy frozen keto cookie dough bites!

These keto cookie dough bites have been a big hit in the Healthy Ambitions household for a couple years now.

In fact, some of my friends and family members will not invite us over unless I promise to bring a couple dozen of these wonderful morsels along for the ride. 

One friend, a non-ketoer actually, is serious about that!

And because they are so super easy to make, I never show up without a batch. 

Can Freezing Eggs Reduce the Risk of Salmonella Poisoning?

Here’s the thing – the FDA recommends not using eggs in any dish that you will consume where the eggs are uncooked. They recommend getting the eggs or the dish you’re making to 160℉ to kill any potential salmonella bacteria. Other options include using egg substitutes, but I’ll tell you right now, this recipe will not turn out the same.

And listen, I know that some people freak out at the idea of uncooked eggs and I’m not here to get involved in this age-old debate. My grandmother practically raised me, along with my sibling and a handful of cousins, on homemade cookie dough, full of raw egg, frozen and served up every time we visited.

So yeah, right or wrong, I was raised on the stuff, turned out just fine, tried it without the egg and decided it just is not as tasty that way.

But it’s your body and your choice, so you do whatever makes you feel most comfortable. Just please don’t come for me if you try it sans egg and it doesn’t taste right!

Anyway, enough of the nostalgia because I know you are ready to get busy with experiencing these yourself! 

When I say super-easy, I really do mean that. There are exactly seven ingredients and seven steps to this recipe and no oven to preheat so bonus!  

You ease into this recipe by lining a large baking sheet with wax paper. The next step is to whisk together almond flour and salt in a medium bowl then set it to the side for just a minute. 

Now, in a separate large bowl, use your electric hand mixer to mix the butter and Swerve sweetener.

Once it’s fully mixed then add in your egg and vanilla extract and keep mixing then add your almond flour/salt for a final round of mixing.

You are getting close to the finish line here so stir in your chocolate chips. Or do you? I ask because you can really get creative at this point.

Some people like a lot of chips while others prefer no chips at all and there are plenty of other things you could add in place of chocolate chips.

Once you’ve stirred in the chips (or not?) then all that is left is to spoon the cookie dough onto the lined baking sheet, freeze and enjoy!

  1. Line a large baking sheet with waxed paper 
  2. In a medium bowl, whisk together almond flour and salt 
  3. In a separate, large bowl beat together butter and Swerve 
  4. Beat in egg and vanilla extract  
  5. Beat in the Almond Flour mix 
  6. Stir in chocolate chips 
  7. Spoon out the cookie dough into small chunks on a prepared baking sheet and freeze until firm.
