Sometimes you just need a little sweetness in your day—and for me, this Coconut Yogurt Keto Parfait was that moment. It’s creamy, a little tart, and feels like a treat—but still fit right into my allergy-friendly, keto approach.

When I was short on time (which… let’s be honest, was every day), I’d grab one of these from the fridge and go. Whether it was breakfast, a midday snack, or something to keep me out of the peanut butter jar at night—this parfait hit the spot.

Big Tub or Little Cups? Totally Your Call

If I had the big container of coconut yogurt, I’d meal prep these into small jars for the week (just like I did with my Coconut Chia Pudding). But honestly? I also kept individual containers of “So Delicious” brand yogurt in the fridge for a fast, no-prep option.

Blackberries were my go-to, but I’d switch it up with raspberries or blueberries depending on what I had. Simple, clean, and done in under 2 minutes? Yes, please.

📋 Ingredients:

  • 1 cup unsweetened coconut yogurt
  • 10 fresh blackberries
  • 2 tsp unsweetened shredded coconut
  • 2 tsp ground flaxseed

🥄 Instructions:

  1. Divide coconut yogurt into two small jars or bowls.
  2. Top each with blackberries, shredded coconut, and flaxseed.
  3. Store in the fridge or enjoy immediately.

💡 Quick Notes:

  • Make-ahead tip: These keep well in jars for 2–3 days—perfect grab-and-go snack.
  • Flavor boost: Add cinnamon, lemon zest, or a drizzle of keto-friendly syrup.
  • Berry swap: Use raspberries or blueberries if that’s what you have on hand!
