Bulk Prep = Sanity Saver

I always bake a full tin (or two!) of these and either store them in the fridge for the week or freeze them in batches. If I’m freezing, I’ll wrap a few at a time in parchment paper so I can grab a portion, toss them in the air fryer or microwave, and go. They reheat beautifully and still taste great.

Hot sauce on top? Always. And my son loves them just as they are—which means one breakfast that works for everyone. Total win.


📋 Ingredients:

  • 6 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup cooked bacon, chopped
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper, to taste

🍳 Instructions:

  1. Preheat oven to 350°F. Lightly spray 6 muffin tins with non-stick spray.
  2. In a bowl, whisk together the eggs, almond milk, salt, and pepper.
  3. Pour the egg mixture evenly into the 6 muffin tins.
  4. Sprinkle the chopped bacon and cheese on top of each.
  5. Bake for 20 minutes or until set.
  6. Let cool slightly before serving—or store for later!

  • Freezer: Wrap 2–3 muffins in parchment and freeze for up to 2 weeks.
