#1. Devilled Eggs
In my humble opinion, deviled eggs should be a staple at every gathering! I’m not a big fan of hard-boiled eggs themselves, but add some mayo and mustard to the cooked yellow yolk, and suddenly I can’t get enough!
12 Hard Boiled Eggs, shelled
6 tbsp mayo
1 tsp Dijon mustard (or yellow mustard)
½ tsp salt
½ tsp pepper
Separate the dry yolk from the whites. Mix the dry yolks with the rest of the ingredients, then spoon the mixture back into the hollow egg whites.

#2. Tomato Mozzarella Salad w/Balsamic Reduction
Just because you are looking for keto Memorial Day recipes, doesn’t mean you have to spend a lot of extra time in the kitchen! This salad presents very well, but is super simple to make! Scale the ingredients to your specific needs.
1-2 logs (8-16 ounces) of fresh mozzarella, sliced
4-5 Roma or beefsteak tomatoes
Baby Spinach or Basil (it’s a flavor preference, but I used baby spinach)
1-2 cups Balsamic Vinegar
Olive Oil (to drizzle)
Salt and pepper, to taste
Reduce the balsamic vinegar in a saucepan over medium heat. Bring to a boil and cook 20-30 minutes until balsamic has reduced to a thicker (and sweeter) glaze.
In a casserole dish, arrange the slices of mozzarella, tomatoes, and spinach (or basil), in an alternating pattern until you have 2 or more rows.
Drizzle olive oil and reduced balsamic over salad, then sprinkle with salt and pepper. Serve immediately.
If you are not serving immediately, hold off on the olive oil and balsamic until you are ready to serve the dish.

#3. Hamburgers w/Keto Buns
Just because you’re keto, doesn’t mean you have to give up the bun! Use my bread recipe, and shape the dough into burger buns! Add extra flavor to the hamburger patties by adding minced garlic, diced onion, Worchester sauce, salt, and pepper!

#4 and #5. Pulled Pork w/Coleslaw
A southern favorite, pulled pork topped with coleslaw makes for an excellent holiday gathering main dish! But if you’d rather put the pulled pork into hamburger buns, the coleslaw works as a great side dish!

For the coleslaw, mix 4 cups of pre-shredded coleslaw mix (or shred your own cabbage), and mix with an easy to whip up coleslaw dressing!
½ cup mayonnaise
¼ cup apple cider vinegar (if you don’t like it too tart, you may want to reduce this amount)
2 tbsp powdered Swerve or other Erythritol brand
salt and pepper to taste

#6. Keto Strawberry Limeade
I found this keto Memorial Day recipe on a “challenge” from my family. After adopting the keto lifestyle, my family would often challenge me to make a keto-friendly version of a favorite food or drink. As we passed a Sonic one day, they both decided I needed to make a keto-friendly Strawberry Limeade!

Ok, this is just a fun recipe to make and a crowd pleaser, because who doesn’t like whoopie pies?? Besides having a hilarious name…” whoopie”…say that 5 times fast without laughing, there is actually a little controversy surrounding the origin of this dessert.

#9. Cheesecake – Brownie Cheesecake from ADIDAF
Carolyn Ketchum with All Day I Dream About Food really outdid herself with this recipe. There is no need to alter it or come up with my own version because this dessert is perfection. My non-keto family went on and on about how amazing this dessert was. If you never tell someone it’s gluten-free and sugar-free, they would never guess!
