The Ultimate Low-Carb Burger Night
Nothing hits the spot quite like a classic steakburger — thin, crispy edges, melty cheese, and that juicy, griddle-seared flavor.
This Copycat Freddy’s-Style Keto Double Steakburger brings all that nostalgia home — without the carbs, grease overload, or drive-thru wait time.
It’s based on my Easy Smash-Style Keto Burgers, but with a few tweaks to make it taste just like the burgers from Freddy’s, Steak ’n Shake, or your favorite old-school diner.
I added finely minced yellow onion right into the patty mix for that signature flavor, used melty cheddar cheese, and stacked two thin patties for the perfect “double” bite.
Serve it on a Nature’s Own Keto bun or a Hero hamburger bun, and you’ve got a low-carb burger that could fool even the biggest fast-food fan.
Why You’ll Love This Recipe
- Authentic Flavor: Tastes like your favorite steakburger but without the carbs.
- High-Protein, Low-Carb: Packed with protein to keep you full and energized.
- Dairy-Free Option: Use Viola Life or another dairy-free cheddar for a fully allergy-friendly version.
- Quick to Make: Ready in 15 minutes from start to finish.
- Family-Friendly: Everyone loves burger night — just swap buns or sides to fit every diet.
Ingredients
For the Patties
- 1 lb ground beef (80/20 blend for flavor)
- ¼ cup finely minced yellow onion
- ½ tsp salt
- ¼ tsp black pepper
For the Assembly
- 4 slices cheddar cheese or dairy-free cheddar (Viola Life works great)
- 2 keto hamburger buns (Hero or Nature’s Own brand)
- Optional toppings: lettuce, tomato, pickles, sugar-free ketchup, mustard, or mayo
Optional Sides
- For keto eaters: Cheesy Onions or Fried Queso Strips
- For non-low-carb family members: curly fries, tater tots, or chips
Step-by-Step Instructions
Step 1: Prep the Meat
Start by finely mincing ¼ of a yellow onion — almost to a paste. Mix it into your ground beef with salt and pepper until evenly distributed.
Form into 4 thin patties — they’ll cook quickly and crisp beautifully.
Healthy Ambitions tip: The thinner the patty, the crispier the edges — just like Freddy’s!
Step 2: Heat the Griddle or Skillet
Preheat a flat-top griddle, cast-iron skillet, or large frying pan over medium-high heat.
You want it hot enough to sear the edges immediately.
Lightly spray with avocado oil or add a touch of butter to help with browning.
Step 3: Smash & Sear
Place the patties on the hot surface and use a spatula or burger press to firmly smash them down.
Cook for 2–3 minutes per side, until the edges are browned and the inside is fully cooked.
Step 4: Melt the Cheese
While the burgers are still on the griddle, place a slice of cheddar (or dairy-free cheddar) on each patty.
Cover with a lid or large bowl for about 30 seconds to help the cheese melt perfectly.
Step 5: Stack & Assemble
For the true Freddy’s experience, go double!
Stack two patties on top of each other and place them on a Hero or Nature’s Own Keto bun.
Add your favorite burger toppings — I love crisp pickles, mustard, and a little mayo.
Step 6: Serve & Enjoy
Pair these keto steakburgers with your favorite side:
- Keto options: Cheesy Onions or Fried Queso Strips
- Family option: Curly fries or tater tots for the kids and non-keto eaters
This recipe makes 2 double burgers, but you can easily scale it up for burger night.

Why This Recipe Works
This recipe hits that perfect balance of fast-food comfort and low-carb nutrition.
Here’s why:
- The finely minced onion infuses the beef with savory flavor and just a touch of sweetness.
- The double-stacked patties make it feel like a classic steakburger.
- The Hero and Nature’s Own keto buns keep the carbs low without sacrificing the bread-like texture you crave.
- Melty cheddar or dairy-free cheese ties it all together in gooey, cheesy perfection.
It’s the kind of meal that proves keto isn’t about giving things up — it’s about making them better.
Tips & Substitutions
1. No Keto Buns?
Use low-carb tortillas, lettuce wraps, or my 2-Ingredient Low-Carb Tortillas for a handheld option.
2. Add Bacon!
Double up on indulgence with a couple slices of crispy bacon between the patties.
3. Switch the Cheese
Try provolone, pepper jack, or smoked gouda for a twist.
4. Make It Spicy
Add sliced jalapeños or mix a dash of cayenne into the beef for a little heat.
5. Make Ahead
Form patties in advance and refrigerate for up to 24 hours, or freeze raw patties with parchment between each layer.
Storage and Reheating
- Store: Keep leftovers in an airtight container for up to 3 days.
- Reheat: Microwave for 45 seconds or warm in a skillet on medium heat until cheese melts again.
- Freeze: Cooked patties can be frozen up to 3 months — reheat directly from frozen in the air fryer at 350°F for 5 minutes.
How to Serve
- Classic Double Burger: Two patties, melty cheese, pickles, mustard, and onions.
- Burger Bowl: Ditch the bun and serve over shredded lettuce with burger sauce.
- Cheesy Keto Plate: Pair with Fried Queso Strips or Cheesy Onions for a fun “fast-food night at home.”
Toddler & Family Notes
One of my favorite things about this recipe is how adaptable it is for the whole family.
My toddler loves the mini version — I just make smaller patties and skip the bun.
For my non-keto husband, I toast regular buns and toss in a batch of curly fries on the side.
No separate meals, no complaints, and everyone leaves happy.
Why It’s a Weeknight Win
This recipe takes 15 minutes, start to finish, and feels restaurant-quality without the effort.
It’s hearty enough for dinner but simple enough to make even on a busy weeknight.
Double the recipe and you’ve got meal-prep burgers ready for quick reheats all week.
