Chipotle Okra with Peppers and Onions

I have a love/hate relationship with both chipotle AND okra. I hate them both, but my husband LOVES them….and since I love him, I came up with this keto-friendly recipe.

He’s the only one in my house that eats it, but several people have asked for the recipe when they hear about it or see it. So, for reasons unbeknownst to me, apparently, this is a yummy dish.

This concoction happened by accident one night. We were running low on groceries, and I needed to throw something together for my husband to take to work for lunch the next day.

In the freezer was a bag of whole okra and a bag of an onion/pepper blend. “I can work with that”, I thought to myself, and so I began.

Chipotle Okra Recipe Ingredients

I began by melting olive oil in our iron skillet, then threw in some minced garlic for good measure. Garlic makes everything better, right?

Then I tossed in the frozen okra and onion/pepper blend and let it cook for about 3 minutes, soaking up all the olive oil and garlic flavors.

Finally, I seasoned the mess out of it with Chipotle Chile Pepper seasoning, salt and cayenne pepper and let it cook for an additional 4-5 minutes. I made this dish very spicy, so you may want to play around with the level of spiciness.

Chipotle Okra Recipe Cooked

When my husband arrived home, I warned him that I made him something new, but had no idea what it tasted like, because there was no way I was taste testing it. It is a rare occasion that I make something that I would never taste, much less eat, so it’s risky.

My husband’s response was immediate. Before he swallowed the first bite, I knew it was a hit! He ended up having it for dinner that night AND lunch the next day. Now this recipe is on a regular lunchbox rotation.

Chipotle Okra with Peppers and Onions

A quick and easy vegetarian dish that can be a side dish or an entre!

Ingredients

  • 12 oz Whole Okra (I use frozen)
  • 12 oz Pepper and Onion Blend (I use frozen)
  • 2 tbsp Olive Oil
  • 1 tbsp Minced Garlic
  • 1 tbsp Chipotle Chile Pepper seasoning
  • 1 tsp Salt
  • ½ tsp Cayenne Pepper

Instructions

  1. Heat olive oil in an iron skillet over medium heat, then sauté minced garlic until it becomes fragrant, about 1-2 minutes.
  2. Toss in okra and pepper/onion blend, mix and let cook for about 1-2 minutes (3-4 minutes if frozen), stirring to coat the veggies in the butter and garlic
  3. Season with chipotle chile pepper, salt, and cayenne pepper. Continue to cook for 4-5 minutes or until veggies reach a desired tenderness.
  4. Serve and enjoy!
