Have you heard of the popular mini pancake cereal?? It’s one of the many TikTok food recipes that went viral in May 2020, and I knew it needed to be ketofied!
What exactly is mini pancake cereal? Basically, mini pancake cereal is made by cooking a bunch of tiny pancakes, about the size of a nickel, but no larger than a quarter. So, super small pancakes!
Then you put a serving of them in a bowl so it looks like cereal, add your favorite pancake toppings and voila! Mini Pancake Cereal that you eat with a spoon!

Mini Pancake Cereal vs. Regular Pancakes
Truth be told, these are more time consuming than regular pancakes, because making coin-sized pancakes isn’t as efficient as making larger pancakes.
While it’s not something I will make as often as regular-sized pancakes, the fun nature of this trending breakfast treat is perfect for special occasions such as birthdays and the holidays!
Why are miniature versions of things so fun?? I have no idea, but they are!
Because of the smaller size, I thought they might be crunchy. I had visions of Cookie Crunch Cereal from my childhood in my head.
I’ve read of non-keto versions of the recipe becoming crispy enough to enjoy with milk, but that was not my experience with making this low-carb version.
It’s possible that the difference in types of flour (wheat vs. almond) affects the outcome of the texture. Since I no longer consume wheat, I won’t be testing out that theory.
The end result of these ketofied mini pancake cereal is very similar in texture to my regular keto pancakes. Crispy on the edges, and light and fluffy in the middle!
How to Make Ketofied Mini Pancake Cereal
Making this pancake batter couldn’t be easier! You get to dump all the ingredients into a mixing bowl at the same time and mix with an electric hand mixer until well combined.

If the batter seems too thick, add almond milk, 1 tbsp at a time, until you reach the desired consistency. Don’t make it too thin and runny though.
Next, add the pancake batter to a squeeze bottle. This can be a little tricky, and I recommend using a funnel.
Even with the funnel, I found I had to use a chopstick to help push the batter into the squeeze bottle, through the funnel, because it was too thick to drain through smoothly.
I purchased the squeeze bottles through Amazon. The hole in the cap was a bit too small, so I ended up cutting the hole a little bit bigger so I could easily squeeze out the batter.
If you don’t have a squeeze bottle, you can you a small spoon to drop little dollops of pancake batter on the cooking surface.
Now it’s time to heat up your griddle or non-stick skillet. If you have one, I highly recommend a larger griddle to reduce the overall cook time. The larger the surface area, the more mini pancakes you can cook at once!
Once the griddle or skillet is heated, melt about a tablespoon (or less if your cooking surface is small) of coconut oil. You can also use cooking spray, but I like the nice crispy edges you get when using coconut oil.
Squeeze out mini pancakes, about the size of a teaspoon onto your heated griddle or skillet.
Cook the pancakes on the first side until they are cooked just over halfway through. They should start to bubble on top.
Then, flip over the pancakes and continue cooking for an additional 30-60 seconds or until golden brown. I tried this with a normal size spatula, and it did not go well.
A mini spatula to flip my mini pancakes worked the best!
Finally, scoop the mini pancakes into a bowl and serve with a pat of butter and your favorite low-carb syrup.

- 2 eggs
- 1/3 cup almond milk
- 2 tbsp butter, melted
- 1 tsp vanilla creme stevia
- 1 1/4 cup almond flour
- 1/3 cup Swerve Sweetener
- 1 tsp baking powder

- Combine all the ingredients together a bowl mix with an electric hand mixer until well combined.

- Melt coconut oil on a griddle to 325 degrees F or in a non-stick skillet on medium-high.
- Squeeze out mini pancakes, about the size of a teaspoon onto your heated griddle or skillet.
- Cook until the pancakes are cooked just over halfway through. They may start to bubble on top.
- Flip over the pancakes and continue cooking for an additional 30-60 seconds or until golden brown.
- Scoop the pancakes into a bowl.
- Serve with a pat of butter and your favorite low-carb syrup or go old school and pour some milk into your bowl.
