Sometimes a girl just needs some chocolate…..decadent, fudgy, super-chocolatey chocolate. Today was one of those days!

Luckily, I have a keto-approved brownie recipe that’s not only easy to make, but I have all the ingredients on hand about 95% of the time.

Made with a few keto-approved food staples, this one-bowl recipe can be whipped up in no time, baking in the oven.

Once they come out of the oven, you only need to decide if you want your brownie warm or chilled…

….or with a glass of milk…or under a scoop of vanilla ice cream….

This is me, literally waiting, counting down the time, for the brownies to come out of the oven, as I write this post.

How to Make Keto Brownies

Start by whisking together the melted butter, powdered Swerve, liquid stevia, vanilla extract, and eggs.

Then, add the almond flour, cocoa powder, chocolate protein, baking powder, and salt, and whisk again. The batter will be pretty thick at this point.

Finally, add ¼ cup of warm water and continue mixing until thoroughly combined.

Pour the batter into a parchment paper-lined 8×8 baking dish and bake at 350 degrees for 20-25 minutes.

Once the edges are set and the middle is no longer jiggly, pull it out of the oven and let cool completely in the baking dish.

You can eat it while it’s still warm, but it will be pretty gooey and the cuts won’t be very neat.

But hey, it’s a brownie, and you probably care more about eating it than presenting it ?

Keto Approved Brownie Recipe

Cook Time: 25 minutes
Total Time: 35 minutes

  1. Preheat 350 degrees F
  2. In a large bowl, whisk together the butter, swerve, stevia, vanilla extract, and eggs.
  3. Add the almond flour, whey protein, baking powder, and salt, and whisk again until well combined. Add the water until batter is thinned to your liking.
  4. Pour the batter into a parchment paper lined 8x8 baking dish and bake for 20-25 minutes, or until the edges are set and the center is no longer jiggly.
  5. Remove from the oven and let cool completely in the baking dish…or if you can’t wait, slice it and gently remove a warm piece of brownie.

Notes

***these brownies are very light weight. For a "heavier", more dense brownie, add 1 tbsp of Collagen Hydrolysate
