Prep the Chicken: Pat the wings dry with a paper towel

Season the Chicken: Dump the wings into a gallon-sized zip-lock baggy. Then sprinkle the baking powder, onion powder, salt, and pepper on top and shake it like Shake'n Bake!

Ready the Chicken:  Lay the chicken wings in a single layer on the prepared baking rack, skin side up.

Bake the Chicken: First at 250 degrees F for 30 minutes, then raise the temp to 425 degrees F and back for an additional 30 mintues.

Sauce the Chicken: Place the chicken wings in a bowl, add your sauce of choice and toss until well coated.

Sauce the Chicken: My personal favorite is a butter, garlic, parmesan mix, melted together in the microwave.
